So I kinda cheated on this. I made a box mix of red velvet cupcakes the other night with my two little helpers, twins Matt & Maya. Photos are all from Instagram, so if the colors are a bit crazy or the quality not super great, that’s why!

For a box mix, they were pretty good–a bit too light & fluffy (which I don’t normally think is possible). I would have rather had these turn out a tad bit more dense. But even compared to the CUTE cupcake shop I recently went to, they were STILL decent (The cupcake place was ADORABLE, but the cupcake was GROSS! However, they had the BEST cream cheese frosting!). So, I decided when I needed a quick dessert that I’d use this box mix that I had sitting in my pantry, but go for a fabulous homemade cream cheese frosting! Ohhhhh. Myyyyy. Goodness! It was THE BEST & very simple.
I started by googling a cream cheese frosting and found this recipe. The only thing I changed was that I only used about 1- 3/4 cups of powdered sugar. I tried 1- 1/2 cups like others mentioned, but wanted it a tad sweeter than that. But since I didn’t want it overly sweet, I went a little under the recipe’s 2 cups.
Everything else was the same. IT. WAS. AMAZING!! Soooo creamy!!! Sweet, light, & a bit tangy, it was EVERYTHING a cream cheese frosting should be!
Here is a photo I took of it. It’s really quite artistic if I do say so myself. I kinda wanna hang this in my kitchen! lol… And remember the day I made this delicious frosting. (Now all I gotta do is make the Red Velvet cupcakes from scratch next time!)

This frosting would also be good on graham crackers. On carrot cake. On my fingers… mmmmmm…..
